Ingredients:
For the Pancakes:
125g plain Flour, Pinch Salt,
1 egg, 300ml milk,
1 tablespoon oil, plus extra, – for greasing.
For the filling:
3 tablespoons olive oil, 3 onions, finely sliced.
100g Cheddar, grated.
400g cured sausage, such as chorizo, salami or cooked pork sausages, thickly sliced.
Method:
Pancakes – Sift the flour and salt into a bowl and make a well in the centre. Add the egg and a little milk and whisk until smooth. Whisk in the oil and remaining milk until the batter is the consistency of single cream. Brush a frying pan with a little oil and heat. Pour in just enough batter to coat the base, tilting to spread out evenly. Cook for 1 minute then turn and cook for a further minute until pale golden on both sides. Drain on kitchen paper. Repeat to make 8 pancakes.
Filling:
Preheat oven to 200c. Heat the olive oil in a large frying pan over a medium heat. Add the onions and cook for 6-8 minutes stirring occasionally, until softened. Lay out pancakes on a flat surface and arrange the sausage and onion down the centre. Roll in the sides. Place in a baking dish then sprinkle the grated cheese on top.
Bake for 15 minutes until the cheese has melted and the filling is hot.
