Ingredients:
60g Butter,
500g Onions, Sliced,
300g Potatoes, peeled and cubed,
1 to 3 teaspoons Crushed Garlic,
400ml full cream milk,
400 ml water,
Salt and Pepper to taste
100g Blue Cheese, crumbled.
Dash of fresh or whipped cream and parsley to garnish.
Method:
Sauté onions and garlic in butter in a large pot until soft, DO NOT allow to brown.
Add cubed potatoes, stir well. Add milk and water, boil and season to taste. Lower heat to simmer and reduce for about 1 hour, or until potatoes are soft. Pour into a food processor, blend till smooth and return to pot. Add cheese and whip over a low heat until cheese has completely melted.
Garnish with cream and parsley.
